Brown Lentil Patties with Babaganoush

Ingredients
*Brown Lentils, dried, 300 gram(s) , cooked and drained*Garlic (fresh, raw, 1 clove), 3 serving Shallots, minced 60 grams )Zucchini, grated 180 grams Olive Oil, .25 cup Curry powder, 2 tbsp Fresh Chives, 3 tbsp )
Directions
Place half the lentils in a food processor, process to smooth paste. Place in bowl and add remaining lentils, 3 cloves of garlic, shallots, zucchini, herbs and curry spice. Mi to combine. Form into flat patties. Heat lightly oiled frying pan over medium heat and brown patties on both sides.

Divide mixed greens between serving plates, place lentil paties on salad and top with babaganoush.
