Bob's Red Mill 13 Bean Soup w/ tomatoes and bacon

* *Bob's Red Mill 13 Bean Soup mix, 3 cup (remove) * *Kitchen Basic Unsalted Chicken Stock, 3 cup (remove) * Onions, raw, 1 cup, chopped (remove) * Carrots, raw, 2 cup, chopped (remove) * Celery, cooked, 2 cup, diced (remove) * Bacon, 5 medium slices, cooked (raw product (remove) * Canned Tomatoes, 2 cup (remove) * *Kosher Salt, 2 tsp (remove) * Garlic, 4 cloves * Herbs like Thyme, Oregano, Bay, etc.
Soak beans over night, drain.
Render fat from bacon and cook until crispy. Remove from pan, sautee onions and garlic until soft and fragrant.
Combine all ingredients EXCEPT TOMATOES in slow cooker, with an additional cup or two of water, set to low for 8-10 hours. Beans will not soften if the cooking liquid is too acidic. Add Tomatoes in last hour, crank to high.
Makes 8 super generous portions. Serve with short pasta if you like.
