Garlic shrimp & spinach rice bowl

Red Ripe Tomatoes, 1 cup, chopped or slicedOnions, raw, 1 cup, choppedMushrooms, fresh, 1 cup, pieces or slicesGarlic, 6 clovesExtra Virgin Olive Oil, 1 tbspTomato Paste, .25 can (6 oz)Water, tap, .5 cup (8 fl oz)Shrimp, cooked, 12 largeSoy Sauce, .25 cupSpinach, fresh, .66 package (10 oz)Uncle Ben's Long Grain & Wild Rice, .5 cup
Sautee garlic, and onion in olive oil for 5 min.
Add in tomatoes and mushrooms, medium heat for 3 minutes.
Add tomato paste, light soy sauce, and water and stir until a tomato broth is formed.
Add shrimp and spinach and cook down until spinach is wilted and shrimp is pink, about 5 minutes.
Add long grain and wild rice (pre-cooked) at the end and warm through, about 3 minutes.
Ladle in rice bowl and serve hot.
