Banana Baked Oatmeal

2 1/2 cups rolled oats1 1/2 teaspoons baking powder1/2 teaspoon baking soda1/4 teaspoon salt1 Tablespoon cinnamon1/2 cup raisins1 cup homemade soymilk, unsweetened -- or any milk2 large eggs (or 4 egg whites for lower fat)1/2 cup unsweetened applesauce1/3 cup honey2 medium bananas -- mashed1 teaspoon vanilla
Preheat oven to 350 degrees. I use a 12-inch cast iron skillet and preheat it in
the oven. You can also use a stoneware deep dish baker.
In a medium bowl, mix the dry ingredients.
In another bowl, mix the wet ingredients making sure they are fully mixed.
Combine the wet and dry ingredients together, mixing well, and pour batter into pan.
Bake for 40-45 minutes, or until golden brown. Test center by inserting a knife and if it comes out clean, the Baked Oatmeal is done.
Serve with butter, applesauce, vanilla yogurt, milk or just by itself!
