Taco Chicken Soup

Ingredients
1 1/2 lbs boneless skinless chicken breasts1/2 water1 envelope taco seasoning mix46 oz. can tomato juice or v-815 oz. can black beans15 oz. can corn1 cup salsa
Directions
Cut 1 and a half lbs. boneless, skinless chicken breasts into cubes. Cook in a small amt. of oil in skillet until no longer pink. Put into a slow cooker along with these ingreds: 1/2 cup water, 1 envelope Taco seasoning mix, 46 ounce can tomato juice or v-8, 15 ounce can black beans (drained and rinsed), 15 -ounce can corn (drained) and 1 cup salsa. Cook on low for 3-4 hrs. Serve with additional salsa or chopped tomatoes.

    I make a version of this with out the water, I must say it's very tasty. We usually double it and cook it on the stove since I have no time in the mornings to prepare the slow cooker. We made this in home ec in school. Its really good if you add low fat sour cream and some shredded cheese on top. - 9/20/13

    I used a rather hot salsa and the hot and spicy V-8 juice....it turned out very spicy.....just the way my husband likes it!! - 3/3/08
