Freezer Friendly Bean Burritos

Ingredients
1 c. brown rice4 c. water4 c. black beans4 c. pinto beans1 c. shoepeg corn1 1/4 c. salsa16 10" tortillas1 tsp cumin1 tsp garlic powder1 tsp oregano1 medium onion, chopped1 1/2 c. low fat cheddar, shredded
Directions
Prepare rice in 4 c. water. When tender, remove from heat and cool.
Drain and rinse beans and transfer to a large bowl. Add all but tortillas and mix.
Divide mixture evenly among tortillas and roll up burrito style.
Freeze burritos in a single layer on greased cookie sheet. When frozen, wrap individually in plastic wrap and then place all in zip top freezer bag.
To serve:
Remove plastic wrap and loosely wrap with a paper towel. Microwave for about 2 - 2 1/2 minutes.
If you prefer the oven: wrap in foil and bake @ 350 for about 10 minutes.
