Empanada Filling

Ingredients
3 Tbs olive oilone medium onion, finely diced3 garlic cloves1 tsp ground cumin1 boneless skinless chicken breast, cut in small pieces1 can black beans, drained1 tomato, dicedJuice from one lemon1/2 Cup golden raisens1/2 Cup cilantro
Directions
Add raisins to 2 cups warm water and set aside. Heat olive oil in pan. Add onion and cook until they are soft (not browned.) Add garlic, cook until clear (30 seconds) add 1 tsp cumin and stir until evenly coated. Add chicken and cook until no longer pink. Add black beans, tomato, and juice from one lemon. Cook until heated through. Remove from heat, let cool briefly and add raisins and cilantro. Allow to sit up to overnight. Can be added to 4 inch rounds of pie crusts, or served in soft tacos.
