Sweet Potato Muffins

3/4 cup packed brown sugar1/3 cup Splenda brand sweetener1/4 cup canola oil1/4 cup unsweetened applesauce1 tsp vanilla2 eggs1 1/2 cups all purpose flour1/2 cup natural bran2 tsp baking powder1 tsp cinnamon1 tsp nutmeg1/2 tsp allspice1/2 tsp salt4 cups peeled, shredded sweet potato1/3 cup raisins1/2 cup pecans, chopped
Preheat oven to 350 degrees. Line muffin tins with paper liners.
Whisk together brown sugar, Spenda, oil, applesauce, vanilla and eggs.
Mix together flour, bran, baking powder, spices, salt and sweet potato in a large bowl. Add wet mixture and stir until just moistened. Add raisins and pecans.
Spoon the batter into the tins. Bake 30 - 35 minutes or until a toothpick inserted into the center comes out clean.
The nutritional information is based on 20 smaller muffins, but it can make 12 nicely capped larger muffins if the "muffin top" is your favourite part!
