Orange Ginger Tofu with veggies

marinate sliced tofu in soy, ginger powder and juice of one orange.
Sautee marinated tofu in coconut oil, keep warm in toaster oven or overn.
Stirfy your chopped veggies and diced tomatoes, stir in left over marinade. Put chopped orange ontop and cover.
Simmer for 10 minutes, stir and serve over rice
