Best Ever Broccoli Casserole

3 stalks broccoli (or 2 boxes frozen chopped)2 c. white sauce (or 1 can cream of mushroom soup and 1 cup milk)1/2 c. mayonnaise5 oz. cheddar cheese, grated (Jack or Swiss works well, too)6 eggs, lightly beaten
- blanch the broccoli, rinse and cool - mince the stalks, coarsely chop the heads (I like to peel the broccoli, and if I'm really on my game, I put the stalks in the food processor)
- if using frozen broccoli, cook partially and drain well
- beat eggs, whisk in the mayo
- whisk in white sauce (recipe follows), or soup and milk
- stir in cheese
- fold in broccoli, mix well, and pour in an oven proof dish
- bake at 350 degrees about 45 minutes or until set
White Sauce
- melt 2 Tbs butter, stir in 2 Tbs flour and cook over LOW LOW heat, stirring constantly (a wooden spoon is best), for 3 minutes... don't let it brown! Take it off the heat if it's too hot.
- slowly whisk in 2 c milk and stir till thickened
