Thai Seafood Soup

Ingredients
1 lb salmon fillets, cut into medium sized pieces1 lb shrimp, shelled and deveined1 tbsp olive oil 1 tsbp garlic paste1 tsbp lemon grass paste1 tbsp ginger paste1 tbsp cilantro paste1 tbsp Sriracha Hot Chili Sauce1 small onion, chopped finely 4 cups fish stock 2 cups water3/4 cup light soy sauce 1/2 cup Thai fish sauce 2 tbsp sugar 1 cup uncooked brown rice3 (13.5 fl oz) cans of lite coconut milk Spring onions, finely chopped for garnishing
Directions
Heat the oil in a large saucepan. Fry the onion. Add garlic paste, ginger paste, cilantro paste, lemon grass paste, and chilli paste. Add uncoooked brown rice and stir to incorporate ingredients. Add the fish stock and water, bring to the boil. Cover and reduce to a simmer and cook for 45 minutes. Add the soy sauce, Thai fish sauce, and sugar. Then add the salmon and shrimp and poach until cooked. Add the coconut milk and simmer for two minutes. To finish, check the seasoning and add the chopped scallions.
