Black Eyed Peas with Smoked Tofu

Ingredients
1.5 cups cooked black eyed peas which were cooked in1 veg bouillon cube dissolved in 2 cups of water.1/2 cup onion, choppedherbs du Provence1 package (8 oz) smoked or bbq tofu1 tsp olive oil
Directions
While the beans are finishing simmering in the bouillon and water, slow saute chopped onions in the olive oil. For the last minute, add a pinch of herbs du Provence.
Cut tofu into the sized pieces you prefer and add to the finishing beans. When the onion is soft but not browned, add to the beans.
Let simmer until the beans start to thicken up.

Serve with cornbread and greens
