Tuna and Chickpea Patties

Ingredients
1-2 medium carrots300g Chickpeas400g canned tuna in springwater1/2Cup of natural or greek yoghurt1 whole fresh egg1 cup fresh breadcrumbs3 spring onions finely sliced1/2Cup parsley or coriander choppedCurry powder to tasteSalt and Pepper to taste
Directions
Makes 6 Jumbo Patties

Pulse chickpeas in a blender to chop.
Add the yoghurt, curry powder, egg, and breadcrumbs.
Process until well combined but still chunky.
Spoon into bowl, add onions, herbs, salt and pepper, and combine.
Divide mixture into portions, roll and flatted with your hands.
Fry for 3 minutes each side until browned and heated through.
