Veggie Omelet

Ingredients
2 large egg Eggs1/4 cup Cauliflower chopped very fine1/4 cup Broccoli, chopped very fine1 tbsp Onions1/4 cup Cheddar or Colby Cheese, Low Fat
Directions
Slightly steam vegetables until slightly tender. Beat eggs well until well blended. Pour into nonstick skillet over medium low heat. Lifting edges slightly to let uncooked egg run underneath; when nearly cooked, add slightly steamed vegetables on half, sprinkle with cheese and fold over. Take off heat and serve.
