Ingredients
Directions
2 cups water1 cup broth1 cup medium salsa1 lb. sirloin tips (stew beef)1 can pinto beans 1 1/2 cup quick barley2 cups cubed cooked sweet potatoes
Put all the ingredients in a crock pot and set it on High for 3-4 hours. Makes about 6 servings.
Feel free to substitute regular potatoes for sweet potatoes, black beans for pinto, canned tomato for salsa, etc. You can also add any kind of veggie to this soup to increase fiber and portion size (or feed more people). Remember, I just used what I happened to have on hand.
