Healthified White Trash Taco Salad

1 lb. 93% lean ground beef1 can black beans or dark red kidney beans, rinsed and drained1 taco seasoning spice packet1 medium head of iceburg lettuce, chopped, or your choice of salad greens4 oz. baked Doritos, crushed1 cup 2% shredded cheddar cheese2 tomatoes, chopped (or 1 pint cherry/grape tomatoes)1/2 cup light French or Catalina dressing
Brown the ground beef over medium heat; drain the broth and fat. Add the beans and taco seasoning, plus 3/4 cup water. Simmer on medium until the water has evaporated, about 5 minutes.
In a large bowl, combine the meat with everything remaining ingredients, including the dressing, and mix well. Divide between large plates and and serve with salsa and sour cream if you wish (not included in nutritional information).
If you’re only cooking for one or two, just use a portion of the meat and halve/quarter the measurements for the remaining ingredients. Save the meat mixture in the fridge for your next meal. If you make the whole thing and save it, you’ll have soggy chips and lettuce the next time you dig in so I wouldn’t recommend that method. Store everything separately until ready to serve and then just toss it all together.

Five stars are NOT enough!!!! This salad is in a rating scale all its own! I also find it to be well worth NOT buying the Doritos to add. I ate the ENTIRE big bag that was left from making yesterday's salad and had to go without today. It's still very good and at least 1,250 Calories fewer! :p - 4/1/12
