Chicken Picadillo

Ingredients
1 Tbsp olive oil1 med onion, diced3 cloves garlic, minced1 lb boneless, skinless chicken breast, cut in 1/2 inch pieces1 tsp ground cumin2 cans Rotel tomatoes with chiles2 cans red kidney beans, rinsed and drained1/2 cup green olives, coarsly chopped
Directions
Heat olive oil over med-high heat. Add onion and garlic and saute until onions are softened, about 4 minutes. Add chicken and cook until no longer pink, about 4 minutes. Add cumin and salt to taste and heat until fragrant.

Add remaining ingredients, bring to a boil. Reduce heat and simmer about 3 minutes. Makes 6 1-cup servings.
