Sweet Potato Lentil Stew

Ingredients
4 cups vegetable broth3 cups sweet potatoes, peeled and cubed1 1/2 cups lentils, rinsed3 med. sized carrots, cut into 1" pieces4 garlic cloves minced3/4 tsp cumin1/2 tsp ginger1/4 tsp cayenne pepper1/4 cup minced fresh cilantro or parsley1/4 tsp salt1/3 cup raisins1/4 cup grated coconut
Directions
Combine first nine ingredients in slow cooker. cook on low 5-6 hours. Stir in last wo ingredients just before serving.
Makes about 10, 1-cup servings.
