Easy Schmeasy Chicken Enchiladas

5 chicken thighs, boneless, skinless1 can diced tomatoes and chilis (I got the kind from Aldi)1/4 cup low fat cream cheese8 corn tortillas4 oz reduced fat mexican cheese, shredded
Heat oven to 350. Pour the can of tomatoes and chilis in a skillet and add the chicken thighs. (I seasoned my chicken with salt, pepper and cumin). Cook until the chicken is done. Pull the thighs out of the skillet and slice then add back into the sauce. Stir the cream cheese and heat until melted. Spray a baking pan with cooking spray. Add a little of the mixture in each tortilla and roll and place seam side down in the pan. Top with any extra mixture and the cheese and bake for about 10 minutes until the cheese is all melted and yummy looking. Top with chopped cilantro and chopped scallions if desired. Low fat sour cream is good too, but add extra calories if you use that.
