Chicken Fajitas with guacamole and sour cream (sans tortilla shell)

Ingredients
4 oz chicken breast cut into strips1 red bell pepper, seeded and cut into strips1/2 white med onion cut into strips1 tbsp cumin1 tsp chili powder1.5 tbsp sour cream (reduced fat)1 oz mozzarella3 large romaine lettuce leafs (washed and dried)For the Guacamole 1 ripe avocado1 tbsp salsa1 tbsp sour creamcilantro (dried or fresh) to tastegarlic powder to tastesalt to taste (just a dash)
Directions
Heat oil in skillet add chicken, cumin, and chili pepper
Cook until almost done. Push chicken to side of pan and add bell pepper, after about 2 minutes add onion and cook until tender. Mix chicken back in, take off heat and sprinkle cheese on top.
For the guacamole
Take avocado seed out and scoop insides into bowl.
Mash with fork and add salsa, sour cream, cilantro, salt, and garlic powder. Mix all together. Makes 3 servings (you'll only need 1/3 of the mixture for these fajitas)-put the unused portion in the fridge.
Assembly:
smooth Guacamole onto 3 lettuce leaves, add chicken/pepper mixture on top, and add a dab of sour cream on top.
Makes 3 large fajitas, I counted all three as one portion. They are delicious! Don't be fooled by the fat content, it's "healthy fat" from the olive oil and avocado.
