Fanny Farmer's Banana Nut Bread

Ingredients
3 ripe bananas well mashed2 eggs well beaten2 C. Flour3/4 C. Sugar1 t. Salt1 t. Baking Soda1 C. chopped Pecans
Directions
Preheat oven to 350 degrees.
Grease a loaf pan. Mix the bananas and eggs together in a large bowl. Stir in the flour, Sugar, salt and baking soda. Add the pecans and blend. put the batter in the loaf pan and bake for 1 hour. Remove from the pan to a rack. Serve still warm or cooled, as you like it.

    I make this recipe even healthier by using whole wheat flour, and brown rice syrup instead of white sugar. - 5/6/11
