Quinoa Bread

Ingredients
1t sugar1T yeast3C unbleached flour1C Quinoa1t salt1.75C water
Directions
1. Proof the yeast with warm water (1C and the 1t sugar).
2. In a mixing bowl add the dry ingredients and mix them.
3. Add the yeast to the dry ingredients and mix well. Add the ~.75C water or enough to make a solid dough ball.
4. Knead for 5 minutes (gotta love your Kitchen Aid)
5. Turn into a lightly greased pot and let rise in a warm place for 25 minutes.
6. Punch down, knead some more, and roll into 2 or 4 long rolls. Lay out on a greased cookie sheet.
7. Let rise another 25 minutes
8. Bake in preheated oven that's set to 350F for 35-40 minutes
9. Let cool 5 minutes before breaking into.
