Honey Mustard Roasted Chicken

Ingredients
* *Potato, raw, 5 medium (2-1/4" to 3-1/4" dia.) (remove) * Carrots, raw, 6 medium (remove) * Mushrooms, fresh, 7 medium (remove) * Olive Oil, 2 tbsp (remove) * Garlic, 6 clove (remove) * *Chicken Thigh w/bone, skinned 3 0z, 24 oz (remove) * *Billybee Honey Mustard, 3 tsp (remove)salt & pepper to tasterosemary or thyme sprinkled over chicken before cooking
Directions
preheat oven to 425 in a shallow roasting pan toss chopped potates, chopped and peeled carrots, whole mushrooms and garlic with olive oil. remove skin from thighs and place ontop of veggies. add salt & pepper to taste. Sprinkle with either thyme or rosemary. Cook for 30 minutes. Brush chicken thighs with hney mustard and cook for another 10 minutes or until chicken is done.
