Nan's Potatoe cakes

Ingredients
8 medium white potatoes peeled and grated1 large grated onion1/4 cup white flour1 large egg1 tsp powdered garlic1 tsp. sea salt1tsp black or white pepper2 tbsp dryed parsley1/4 c. olive oil4 tbsp of fleischmans light margerine
Directions
Drain excess liquid off potatoes and onions, add all other except olive oil and margerine. Blend well and leave sit. In mean time heat large skillet on medium high and add oil and margerine mixing together in pan, add potatoe mixture with 1/4 cup scooper and gently press down to flatten. Brown both sides for about 4 minutes each side or until desired browness. Drain on papper towels and enjoy. Taste great with fat free sour cream or stewed tomatoes.
