easy mexican chicken dish

Directions
1 small chicken breast , diced (all visible fat removed)cooking spray1 dash black pepper1 dash garlic salt1/2 cup canned corn (drained)1/2 cup black beans (rinsed and drained)4 tbsp salsa (mild, med or hot)1 tbsp light sour cream1/2 cup cooked brown rice
-remove any visible fat from chicken
-dice chicken
-sprinkle pepper and garlic salt on chicken
-heat skillet and spritz with cooking spray
-cook chicken in skillet until browned and cooked through.(approx 8 min)
-add beans, corn and salsa to skillet and mix with chicken and cook for 2 min
-remove from heat
-mix in sour cream
-serve over brown rice
-enjoy!

Note: I sometimes like to add a tablespoon or two of shredded cheese on top of this dish....but it is not counted in the calories for this recipe.
