Cottage Cheese Omlet with 2 Slices of Lite Bread

1 cup egg substitute3oz of fat free cottage cheesesaltpepper4 slices lite wheat bread toasted
Heat a skillet and spray with butter flavored non stick cooking spray. Mix egg substitute salt and pepper(dash of each). Pour into pan and cook over low heat until firm. Place a peice of foil over eggs untill cooked on top. When done spread cottage cheese on ha and fold the egg in half covering the cottage cheese. Cook untill cheese starts to melt out the side. Toast bread and put 2 tsp of jelly on each slice. Place omlet on a dish. Cut in half. Enjoy!! Makes 2 servings.
