Salmon Patties

Ingredients
2 egg whites beaten2 cups lite wheat bread crumbs (4 slices)1/2 cup fat free salad dressing spread1 tsp lemon pepper12 oz canned or packaged pink salmon, boneless & skinless, drained
Directions
Mix egg whites, bread crumbs, salad dressing, lemon pepper, and then add salmon.
Use 1/4 cup measuring cup to measure out 7 patties.
Broil approx. 4-5 minutes on each side (watch patties carefully when broiling).

    For those asking about fat free salad dressing spread, if you check the ingredient details you will see Fat Free Miracle Whip listed. "Salad dressing spread" is the generic term for mayo-type salad dressing. Also, fresh bread crumbs and dried bread crumbs are not interchangable. - 7/16/08

    I used only 1 cup of Italian bread crumbs, added some minced celery and red onion, and used fresh ground pepper and lemon juice instead of lemon pepper. Really good! Reminded me of restaurant crab cakes. - 10/6/08

    So easy and so tasty! I added chopped onion and Old Bay Seasoning, as well as real lemon juice and ground pepper instead of the lemon pepper seasoning.

    The only suggestion - next time I will use less than 2 cups of bread crumbs as they were a little bready...but really really good! - 7/16/08

    Mom always used crushed saltines (I use the ones w/ unsalted tops to reduce sodium) for the starch filler. I love salmon patties, but hubby won't touch them! I cook a batch and freeze them in fold-over sandwich bags then out in a freezer bag. They heat up fine in microwave or a skillet. - 7/16/08

    I subbed Miracle Whip for salad spread and Vigo Italian bread crumbs for the bread crumbs that were cited in the recipe. Next time I will use less bread crumbs. My patties were REALLY bready. Adding onions was an excellent suggestion. - 6/17/08

    This was ok. I liked the creaminess of the patty, I didn't think there were too many bread crumbs but I just need to play around with the spices. 1/4 cup patties are the perfect size and I actually got 9 1/4 cup patties. Thank you for sharing this. - 10/27/11

    I love these! So easy to split the recipe. (I am cooking for one!) I also added onion and reduced the amount of the fat free dressing. I also use 1 whole egg and fewer breadcrumbs. I bet adding Old Bay would be yummy! - 3/16/09

    Yummo! I wasn't able to get 7 servings out of this but it's still low in calories. I made the patties then put them in the freezer for 1/2 hours to firm up before frying. - 1/21/09
