Oatmeal Protein Pancakes

Ingredients
1C Oatmeal, quick or old-fashioned1/2 C Whole wheat flour1/4 C Soy flour4T Milled flax seed1T Sugar, raw, granulated or brown1T Ground cinnamon1t Nutmeg1/2t Baking soda1C Buttermilk (lowfat, or 1T lemon juice in 1C skim milk - let sit for 5 minutes)1 Large Egg
Directions
Using a 1/4 cup measure, scoop the lightly blended mixture onto a hot pan or griddle that's been lightly coated with butter. Do NOT overmix the batter, and be sure you're ready to cook the pancakes right away after blending in the milk and egg. If the mixture is too runny, add more flour. If it's to thick, add additional milk. Makes 8 cakes (4 servings).
