John's Buttermilk Flax Pancakes

3/4 c - white flour3/4 c - whole wheat flour1/4 c - ground golden flaxseed2 tsp baking powder1 tbsp canola oil1 lg egg2 cups buttermilk (lowfat - I make my own)
Mix all the dry ingredients. In a separate container, mix the oil and egg, then add and mix the buttermilk. Add to the dry ingredients and mix. optional at this point: add blueberries (go antioxidants!) , or add 1/2 cup mini chocolate chips when the kids ask for them.
Let sit for 5 min while the griddle gets hot for the leaven to work. Put a little less than 1/4 cup onto the griddle/pan per pancake. Makes 16 pancakes, each 'serving' in this recipe is 1 pancake based on this estimate.
