Apple-Cinnamon Muffins

3/4 cup 1%milk1/4cup vegetable oil1 large egg2 cups all-purpose flour1/2 cup sugar2 tsp baking powder1/2 tsp salt1 cup chopped, peeled apple1/2 tsp ground cinnamon
1. Heat oven to 400F. Grease bottoms only of 24 small muffin cups.
2. In large bowl, beat milk, oil, egg and apple with fork or wire whisk until well mixed. Stir in flour, sugar, baking powder, salt, and cinnamon all at once. Just until flour is moistened (batter will be lumpy). Divide batter evenly among muffin cups.
3. Bake 20-25 minutes or until golden brown. If baked in greased pan, let stand about 5 minutes in pan, then remove from pan to wire rack; if baked in paper baking cups, immediately remove from pan to wire rack. Serve warm if desired.
