Savory Polenta

1 cup polenta3/4 cup chopped onion3 tsp minced garlic4 cups chicken stock3/4 cup parmesan grated2 tbsp oil3/4 tsp saltpepper to taste
Makes 5 servings.
Preheat oven to 350 degrees.
Sweat onions and salt over medium heat in an oven proof pan - about 4 minutes.
Add garlic. Cook for 1 minute.
Add stock and bring to boil.
Add polenta while whisking.
Cover and place in oven for 35 minutes. While baking stir 2 times to prevent clumping.
Remove from oven and stir in cheese. salt and pepper to taste.
Serve.
