Santa Fe Chicken Bake

Ingredients
5-6 chicken breasts1 can cream of chicken soup1 cup salsa2 TBSP cilantro1 soup can water1.5 cups of white long grain rice1 diced yellow or red pepper1 can black beans 19 oz2 cups grated cheddar
Directions
Preheat oven to 350.
Mix rice, peppers and rinsed beans in 9x13 glass pan.
In a bowl mix soup, water and cilantro and pour over mixture in pan.
Place chicken breasts over rice. Spoon salsa over chicken.
Bake for 35 minutes.
Add grated cheese and bake 10 mins. longer.

    I finally made this recipe (1/2 recipe), but I inadvertently mixed things together before I put the chicken in the dish. Used less low fat cheese and low fat chicken soup with less rice. Also had to bake it longer than specified, but it was easy to make. Tasted great. - 7/5/10
