Granola Bars

2 C. Oats3/4 C Wheat Germ3/4 C. Sunflower seeds1 C. Crushed peanuts5 Tbsp + 1 tsp slenda brown sugar blend1/2 C. honey4 Tbsp butter2 tsp vanilla extract1/2 tsp Kosher salt1/4 C. Raisins1/4 C. Craisins1/4 C. dried blueberries
Preheat oven to 400 degrees.
Crush peanuts.
Mix peanuts, oats, wheat germ, and sunflower seeds in a baking dish. Toast in oven for 10-12 minutes, stirring every few minutes so they don't burn.
Meanwhile, coat a 9x13 class baking dish with cooking spray, then line with wax paper also sprayed with cooking spray.
Put the brown sugar, vanilla, honey, butter and salt into a saucepan and bring to a simmer, sirring constantly.
Mix every thing in a large bowl, make sure that everything gets coated. Put mixture into waiting prepared 9x13 dish. Spread out with a wooden spoon or spatula. place another piece of waxed paper on top and PRESS HARD all over the granola. You want to compact it together so that your bars wont fall apart when you cut them.
Wait 2-3 hours or until completely cooled, then turn over onto a cutting board and peel away the waxed paper. I cut mine down the middle lengthwise then make bars out of them. Seal them in snack baggies or in an airtight container with waxed paper so they won't stick.
