3 med sweet potato peeled and cut into thin wedges1 small onion sliced2 tbsp oilsalt and pepper or other seasoning you enjoy4 6oz skinless chicken breasts4 cups fresh spinach2 tbsp lemon juice
Combine sweet potato, onion, 1.5 tbsp oil and seasoning, mix and spread on cookie sheet, bake 25 minutes at 425F. While cooking pouns chicken breasts to uniform thickness and season. Heat .5 tbsp oil in non stick skillet and cook until brown and cooked through. In large bowl toss warm potato mixture, spinach and lemon juice. Serve immediately.
