Alfredo sauce with cottage cheese

Ingredients
1 cup low-fat cottage cheese1 cup skim milk1 egg1/2 teaspoon fresh ground pepper2 tablespoons butter1/2 cup grated Parmesan cheese

1. In blender, combine cottage cheese, milk, egg and pepper. Puree until smooth.

2. In small saucepan, melt butter over low heat. Add puree and bring to a simmer, stirring occasionally. Stir in parmesan cheese.

3. Season with italian herbs or garlic as desired.

4. Serve over prepared whole wheat fettucine (6 oz. dry)

Be sure to have fettucine ready to serve before sauce simmers. Sauce will separate if simmers too long.
