Ingredients
Plantains, 1 cup slices Green Peppers (bell peppers), 0.5 cup, chopped Peppers, sweet, red, raw, sliced, .5 cup *Peppers, sweet, red, fresh, .5 cup, chopped Yellow Peppers (bell peppers), 1 pepper, large (3-3/4" long, 3" dia) Onions, raw, 1 cup, chopped Leeks, 1 cup Chicken Breast, no skin, 2 breast, bone and skin removed Red Ripe Tomatoes, 1 cup cherry tomatoes *Canola Oil, 2 tbsp Salt, 1 dash Soup, bouillon cubes and granules, low sodium, dry, 1 teaspoon Garlic, 1 tsp Ginger Root, 1 tsp Chicken stock, home-prepared, 1 cup
Directions
In preparation, deep fry plantains and blot on tissue. Heat up oil in skillet and add in onions, garlic and ginger to brown. Add chicken, bouillon cube and salt to brown together while stirring. Add chopped tomatoes and let cook for about 5 minutes. When tomatoes are tender, add all varieties of chopped peppers (green, red and yellow). Mix up gumbo of chicken onions and peppers. Add fried plantain slices and stir with the chicken broth. Let the whole mixture cook for about 6 minutes and serve hot.
