Apricot and Walnut Flax Fibre Loaf

Ingredients
2 cups Whole Wheat Flour1.33 cups of Wheat Bran0.33 cup Applesauce1 cup Apricot Jam0.5 cup Water4 Tbsp Ground Flaxseed4 tsp Baking Powder1 tsp Baking Powder2 tsp Cinnamon0.25 tsp Salt1 tsp Vanilla Extract1 Cup Walnuts
Directions
Preheat oven to 180C.

Grease and line loaf tin

Mix all dry ingredients in a large bowl. Add applesauce, Apricot jam, water and vanilla extract to mixture. Gently add the walnuts so that they do not break too much.

After cooking for 25 minutes pierce centre with knife to see if loaf is cooked right through. If not allow another 3 -5 minutes.

Makes 12 good size pieces.
