11/2 cup egg substitute2oz shredded cheddar cheese (low fat)1 tsp saltdash of pepper1/2 cup chopped raw onion1 cup frozen asparagus (thawed) and cut into pieces1/4 cup skim milk
In a heated skillet sprayed with butter flavored non stick cooking spray and onions saute until golden brown and soft. Give the pan another couple of sprays of butter spray and add the asparagus mix with onions. In a bowl add egg substitute, salt, pepper and milk and beat together. Pour over the onion and asparagus let it cook over low heat cover with foil until egg is set sprinkle with cheese put under the broiler until cheese is melted. Cut into 4 slices and Enjoy!!
