Yummy minestrone

Ingredients
1 large onion, chopped1 clove garlic, sliced or crushed2 diced carrots (or you can use 1/2 pkt frozen veg!)1 tin diced tomatoes (including juice)1 tin kidney beans (including juice)2 cups chicken stock1 tspn mixed herbs1/2 cup pasta shells1/2 bunch spinach, chopped (or you can use frozen!)
Directions
Makes at least 4 (big) bowls full.
Combine onion, garlic and carrots in a large pot and sweat for 10 minutes, stirring occaisonally.
Add Tomatoes, stock, herbs, (pepper if desired) and bring to the boil.
Add pasta and beans and cook 10 minutes.
Add spinach and cook for about 5 minutes more.
Serve with a bit of parmy cheese on top if you like!
