Turkey Sausage Stuffed Acorn Squash

Ingredients
*Squash, winter, acorn, raw, 2 squash (4 inch dia) (remove)*Turkey Polish Sausage, 4 oz (remove)Celery, raw, .75 cup, diced (remove)Onions, raw, .75 cup, chopped (remove)*Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry, 0.5 cup (remove)Yogurt, plain, low fat, .75 cup (8 fl oz) (remove)Spinach, fresh, 1 cup (remove)Parmesan Cheese, grated, 4 tbsp (remove)
Directions
Cook quinoa. Half acorn squash and scoop out seeds. Salt and bake facedown on foil lined cookie sheet for 30 minutes. Meanwhile, remove sausage from casing and saute over medium heat. When sausage is browned and cooked through remove from pan. Add celery and onion, saute until opaque, add garlic and saute until aromatic. remove from heat. In a large bowl mix sausage mixture, cooked quinoa, yogurt and spinach. Stuff acorn halves with stuffing, springle with parmesan cheese and bake for an additional 10 minutes until heated through and cheese is browned.

    This was pretty good but I did not care for the yogurt in this; next time would add an egg. I made over the recipe with the following changes: fat free Greek yogurt instead of low fat; half the Parmesan cheese; subbed diced red pepper for celery. Came out at 332 calories instead of the 226 listed. - 10/31/14
