Broccoli au gratin

2 bunches fresh broccoli with the stalks trimmed off.6 tablespoons of butter 3/4 cup stone ground whole wheat flour2 c. 2% skim milk1.5 cups heavy whipping cream1 tablespoon salt1 tsp black pepper1 cup grated low fat cheddar cheese
boil the broccoli until tender
Remove the broccoli and put into a 2 qt. shallow baking dish.
melt the butter in a pan. turn off the heat.
pour in the milk and cream and seasonings.
stir constantly while adding the flour
When lump free pour over the broccoli
sprinkle cheese over the top
bake at 350 F for 40 minutes or until a golden brown.
Serve immediately.
