Fresh Mozzarella and Tomato Crostinis

Ingredients
4 tbsp extra virgin olive oil1 whole granary baguette, sliced into 1/4" slices8 vine-ripened tomatoes1/2 cup fresh basil leaves1/4 teaspoon minced garlic2 oz (150g) fresh mozzarella cheese (it works better with whole milk cheese, but you can use reduced fat if you want to)Salt and pepper to taste
Directions
Slice the baguette. Brush a baking pan with olive oil and place the baguette slices on it. Season the bread with salt and pepper.
Slice the mozzarella into about 1/4-inch slices and place one on each slice of bread
Slice the tomatoes and place a half slice on each bread
Place a basil leaf or two and some garlic mince on top of that, drizzle with a tiny bit of olive oil
Bake in the oven for 15-18 minutes or until the bread is toasted and the cheese is melty.

Makes 8 servings, number of slices for each depends on the size of baguettes and width of slices.
