Shrimp with pineapple and rice

1 lb cooked shrimp; 1/2 can Dole pineapple chunks with 1/2 of juice; 2 scallions chopped; 1/4 tsp turmeric; pinch cayenne pepper; 1 tbsp lemon juice or to taste; 1/4 tsp sea salt; 1/4 tsp black pepper; 1 cup white rice; 3 cups water; 3 cups Asian vegetables. Put everything in pot and cook for approximately 20 minutes. Add shrimp and continue cooking for additonal 5 to 10 mintues. Serve with corn on cob and cole slaw.
