Sunshine's Ceviche

Ingredients
8 z. Shrimp If raw make sure you boil it and rinse1 Cucumber peeled and diced3 Celery Diced1 tbs Cilantro Chopped1/2 c. Onion chopped1 c.Carrots shredded1/2 c. Lemon juice enough to cover half waysalt to taste
Directions
Boil shrimp rinse and cool. Chop up all ingredients in the amounts that you like. Start out with one of each vegetable chopped and add to you desire. If you add more veggies or shrimp then It will change the Calories and fat etc. Add lemon juice and refrigerate till chilled. Add salt to each portion if desired
