Moroccan Chicken with Rice and Lentils

Ingredients
1 Tbsp olive oil2 chicken breasts cubed3 garlic cloves crushed and chopped1/2 lg onion chopped3 mushrooms chopped4 carrots sliced3 stalks of celery chopped1 1/2 cups uncooked lentils3/4 cup uncooked brown rice4 cups vegetable brothMoroccan Spices (Epicure)
Directions
Heat olive oil in a large pan, add chicken and cook until brown.
Add garlic and onions and cook until translucent.
Add mushrooms, celery and onion, stir, add lentils, rice and Moroccan spices.
Cook for 5 minutes stirring frequently.
Add broth, let it boil and reduce heat.
Cover and cook until done. About 70 minutes.
Makes 8 servings.
