Sweet Corn Bread

1 cup cornmeal1 1/2 cup flour3/4 cup sugar1 1/2 Tbsp baking powder1 tsp salt1 1/2 cup skim milk1 large whole egg1 egg white3 Tbsp oil**Optional honey-butter coating:2 Tbsp butter/margarine (melted)2 Tbso honey
Preheat oven to 400. Combine dry ingredients, stirring to blend. Add in milk, egg and egg white, and oil and stir with wooden spoon until fairly smooth. Pour into greased 9 inch pie pan or 9x9 baking dish. Bake until golden brown on top and toothpick inserted in center comes out clean, approx. 25-30 minutes. **For optional honey-butter coating: melt butter and stir in honey. Brush over top of cornbread while still warm. Let cool 10 minutes and serve. Makes 12 servings.
