Hamburger Veggie Soup (1 1/2 Cup Serving)

Ground Sirloin 1/2 lb.Green Pepper 3/4 cup choppedCelery 2 StalksOnions, raw, 1 cup, chopped1 Tbsp. Minced GarlicBeef broth (reduced sirloin) 4 cupsYellow Sweet Corn, Frozen, 1/2 cup Peas, frozen, 1/2 cupFrozen Green Beans French style, 1 cupDiced Tomatoes 1 can (15 oz.)Small size Whole Grain Pasta 1/2 cup2 Tsp Worcestershire Sauce1 Tbsp. Italian SeasoningPepper to Taste
1. Saute the beef, onion, garlic, green pepper, and celery until the beef is brown and the onions are translucent. Drain any fat (there shouldn't be very much if you are using ground chuck)
2. Throw in the rest of the ingredients, stir, bring to a boil, reduce heat to a simmer and let simmer for about 30 min.
I usually crumble some whole grain crackers on top Yum! (not included in nutrition info)
Makes 5 servings 1.5 cups each

This is definitely filling and it tastes pretty good, but I probably will change the Italian seasoning to something else. It's not a flavor my family cares for in a soup. The sodium in this is so high, that I used unsalted beef stock instead (heart problems). I want to try it w/ ground turkey also. - 1/30/09
