Chocolate Chip Peanut Butter Oatmeal Cookies

Ingredients
1 cup butter, softened1 cup white sugar2/3 cup brown sugar2 tsp vanilla extract1 cup peanut butter, smooth2 large egss1 1/2 cup white flour2 tsp baking soda1/2 tsp salt1 1/2 cup old fashioned oats2 cups mini chocolate chips
Directions
Cream together butter and sugars together. Mix in peanut butter, vanilla extract, and eggs.

Separately, mix together flour, salt, baking soda, and oats. Add dry mixture to "wet" ingredients, mixing together thoroughly.

Fold in mini chocolate chips.

Drop by spoonfuls onto baking sheets.
Bake at 350 degrees for 8-10 minutes or until edges golden brown. Makes approx. 4 dozen cookies.

    Um.....DELISH. These turned out soft and moist and just what my family was looking for. I used truvia instead of sugar, cut the brown sugar to 1/2 cup and used just 1.5 cups of mini chocolate chips. Divine! Thanks! - 5/10/11
