Vegetable Pilaf

2 oz butter2 onions, sliced2 cloves garlic, crushed1 large red bell pepper, finely chopped2 cups long grain rice5 1/2 cups vegetable stock1 cup corn1 cup peas1/2 cup grated parmesan2 Tbsp fresh chives, chopped2 Tbsp fresh coriander, choppedSalt and Pepper (to taste)
1. melt the butter in a large pan. Add the onion and cook for 5 minutes over low heat, or until soft. Add the garlic and cook 1 more minute. Add the pepper and rice and cook for 3 minutes. Stir in the stock. Bring to a boil, stirring once. Reduce heat and simmer for 5 minutes, or until most of the stock has been absorbed.
2. Add corn and peas to the rice mixture. Cook, covered, over low heat until rice is tender (about 10 minutes).
3. Stir in Parmesan and herbs. Season to taste with salt and pepper before serving.
