Green Chile and Cream Cheese Stuffed Chicken

4-5 skinless, Chicken Breasts4 oz Cream Cheese, softened2 cans green chiles, whole or diced1 small onionsaltpepper2 TBSP Butter8 TBSP bread crumbs
1. Dice onion and cook in a sauce pan over medium high heat until softened and lightly browned. Add onion to cream cheese in a bowl and mix with a pinch of salt and 1/2 teaspoon pepper, and green chilies
2. Butterfly chicken breasts and spread with cream cheese mixture. Roll up or fold chicken breasts in half. Roll chicken breast in melted butter and then bread crumbs OR roll in bread crumbs and then pour melted butter over the top.
3. Bake in a 375 degree preheated oven for 25-30 minutes or until chicken is cooked through. Enjoy!
